Ground Chicken Loco Moco

A popular Hawaiian dish, Loco Moco traditionally consists of white rice topped with a hamburger patty, fried egg and brown gravy. We’ve lightened it up a bit here with our lean ground chicken, and it still tastes just like the classic island favorite.  For the gravy, it’s ok to use store-bought or a mix, or use your favorite homemade recipe.

Serve with fresh sliced pineapple on the side for a complete Hawaiian breakfast.

Instructions

  1. Prepare the patties: Season the ground chicken with a small amount of salt and black pepper. Form into 4 patties. Heat 1 Tb. olive oil in a skillet over medium heat and cook the patties, turning once, until cooked through (to an internal temperature of at least 165 F). Set patties aside, keeping warm.
  2. In the same skillet, add another 1 Tb. olive oil, and saute the onion and mushrooms until soft and golden brown, about 5 minutes.
  3. Fry each egg until desired doneness (we like sunnyside up).
  4. Assemble the Loco Moco: On a plate place 3/4 cup cooked white rice, then top with a ground chicken patty then some onions and mushrooms. Pour some gravy over it, then top with a fried egg and serve.
