Chicken Sausages with Apricot Rosemary Glaze

Sweet, spicy and aromatic with rosemary – this glaze is an alarm clock for the taste buds.  It will work with any type of breakfast link, but pairs particularly well with the chicken and apple flavors.

Instructions

  1. Make the glaze by whisking apricot preserves in heavy medium saucepan over medium heat until melted and smooth, about 1 minute.
  2. Add mustard and whisk until beginning to simmer, about 30 seconds.
  3. Remove from heat. Stir in chopped rosemary. Season glaze to taste with salt and pepper.
  4. (Can be made one day ahead. Cover and refrigerate. Stir orver medium heat until heated through).
  5. For sausages, heat oil in heavy large skillet over medium-high heat. Add sausages and sauté until browned and cooked through, about 10 minutes. Remove oil from skillet, add glaze from saucepan to sausages in skillet and stir over medium heat until sausages are glazed, about 1 minute. Transfer to platter, garnish with sprig of fresh rosemary, and serve.
