Apple Sausage Pan-Cake

Ingredients
- 1 13.3-oz. package Isernio’s breakfast sausage (Pork Breakfast, Chicken Breakfast, Pork Apple, or Chicken Apple), removed from casings
- 2 tart apples, peeled, cored and sliced ¼ inch thick
- 2 Tb. brown sugar
- 1 tsp. cinnamon
- 1 Tb. butter
- 1-1/2 cups pancake batter
Instructions
- In a large skillet, sauté sausage until it just loses its pinkness. Set aside.
- In the same skillet, add apples and sprinkle with brown sugar and cinnamon. Cook 1-2 minutes until apples just lose their crispness. Set aside.
- Place the butter in a 9-inch cast iron skillet and heat in a 450 F oven until bubbly and hot. Arrange the sausage in the pan and cover with apples, distributing evenly. Pour the pancake batter over the apples and bake until nicely browned, about 8-12 minutes. Cut into wedges and serve immediately.
