Garlic Toasts with Sausage, Peppers and Goat Cheese

Ingredients
- 1 lb Isernio’s Mild Italian Sausage – Pork or Chicken, Bulk or Links (removed from casing if using links)
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1 tbsp finely chopped fresh parsley, divided
- 3/4 cup roasted red peppers, drained and sliced
- 16 slices baguette, cut diagonally into 1/2-inch thick slices
- 1/2 cup goat cheese, crumbled
Instructions
- Preheat oven to 375°F and line baking sheet with parchment paper. In saucepan, heat butter, garlic and salt until butter is melted; stir in 1 tsp parsley. Remove from heat; brush over one side of baguette slices. Place on prepared baking sheet; bake for 7 to 8 minutes or until golden and toasted.
- Meanwhile, in nonstick skillet set over on medium-high heat, crumble and cook sausage for 8 to 10 minutes or until browned. Stir in peppers. Transfer to plate lined with paper towel.
- Divide sausage mixture evenly among baguette slices. Top with goat cheese. Sprinkle with remaining parsley before serving.
- Tip: For a make-ahead option, assemble toasts (minus the parsley garnish). When ready to serve, broil for 1 minute, then sprinkle with parsley.
