Instructions

  1. Heat 2 Tb. oil in large saucepan over medium-low heat. Add onion, carrots, celery, garlic and 1 tsp. salt. Cook until tender, about 10 minutes.
  2. Meanwhile, add the meat to a large skillet and cook, stirring frequently and breaking up with a wooden spoon, until all pinkness is gone.
  3. Add meat to vegetable mixture. Mix in chili powder, cumin, oregano and sage and stir for 3 minutes.
  4. Add broth to skillet and bring to a boil, scraping up any browned bits. Then stir into meat & vegetable mixture. Add tomatoes with liquid and beans and bring to boil. Reduce heat and simmer uncovered, stirring occasionally, approximately 30 minutes.
  5. Stir in cilantro and spoon into bowls. Top with cheese as desired. If you prefer more heat, add Tabasco sauce or crushed red chili as desired.
