Apple Sausage Pan-Cake

This all-in-one breakfast makes for a satisfying start to the day.  Try it drizzled with pure maple syrup for an extra tasty treat.

Instructions

  • 1. In a large skillet, sauté sausage until it just loses its pinkness. Set aside.
  • 2. In the same skillet, add apples and sprinkle with brown sugar and cinnamon. Cook 1-2 minutes until apples just lose their crispness. Set aside.
  • 3. Place the butter in a 9-inch cast iron skillet and heat in a 450 F oven until bubbly and hot. Arrange the sausage in the pan and cover with apples, distributing evenly. Pour the pancake batter over the apples and bake until nicely browned, about 8-12 minutes. Cut into wedges and serve immediately.
