WHITE BEAN CHILI

Instructions

  • 1. Heat 2 Tb. oil in large saucepan over medium-low heat. Add onion, carrots, celery, garlic and 1 tsp. salt. Cook until tender, about 10 minutes.
  • 2. Meanwhile, add the meat to a large skillet and cook, stirring frequently and breaking up with a wooden spoon, until all pinkness is gone.
  • 3. Add meat to vegetable mixture. Mix in chili powder, cumin, oregano and sage and stir for 3 minutes.
  • 4. Add broth to skillet and bring to a boil, scraping up any browned bits. Then stir into meat & vegetable mixture. Add tomatoes with liquid and beans and bring to boil. Reduce heat and simmer uncovered, stirring occasionally, approximately 30 minutes.
  • 5. Stir in cilantro and spoon into bowls. Top with cheese as desired. If you prefer more heat, add Tabasco sauce or crushed red chili as desired.
