Ingredients
- 2 tablespoons olive oil
- 1 lb Isernio’s Al Pastor Diced Pork
- ½ sweet onion, chopped
- 1 cup fresh pineapple, diced
- ¼ cup fresh basil, chopped
- 1 jalapeno, seeded and chopped
- Juice of 1 lime
- ¼ teaspoon salt
- 8 eggs
- 8 corn tortillas, warmed
- 1 avocado, diced, for serving
- Cotija cheese, crumbled, for serving
- Lime wedges, for serving
Instructions
- In a bowl combine the diced pineapple, basil, jalapeno, lime juice, and salt. Set aside.
- In a large skillet heat the olive oil over medium heat. Add the chopped onion and Al Pastor diced pork, breaking up meat with a wooden spoon. Cook, stirring often, until the meat is fully done, about 10 minutes. Set aside and keep warm.
- Fry the eggs to your liking – we like them sunny-side up with soft yolks.
- To serve, top each warmed tortilla with a fried egg and the Al Pastor. Add the pineapple salsa, diced avocado, and cotija cheese. Squeeze a bit of lime juice on each taco. Optional: also top each taco with your favorite hot sauce. Enjoy!
