Al Pastor Breakfast Tacos

You had us at breakfast tacos! Take your normal morning breakfast routine, and kick it up with these delicious Al Pastor breakfast tacos. Talk about a refreshing and protein-filled way to start the day.

  1. In a bowl combine the diced pineapple, basil, jalapeno, lime juice, and salt. Set aside.
  2. In a large skillet heat the olive oil over medium heat. Add the chopped onion and Al Pastor diced pork, breaking up meat with a wooden spoon. Cook, stirring often, until the meat is fully done, about 10 minutes. Set aside and keep warm.
  3. Fry the eggs to your liking – we like them sunny-side up with soft yolks.
  4. To serve, top each warmed tortilla with a fried egg and the Al Pastor. Add the pineapple salsa, diced avocado, and cotija cheese. Squeeze a bit of lime juice on each taco. Optional: also top each taco with your favorite hot sauce. Enjoy!
