Ingredients
- 1 pound (16 oz.) Isernio's Ground Chicken
- 2 Tb olive oil
- 1 tsp ground cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 fajita-size flour tortillas
- 2 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 1/3 cup plain greek yogurt
- Juice of 2 limes
- 2 tsp honey or agave nectar
- Salt & pepper to taste
- Chopped cilantro leaves
- Your favorite salsa or pico de gallo
- Extra lime slices
Instructions
- In a small bowl, mix together cumin, chili powder, garlic powder, salt & pepper.
- In another small bowl, mix together yogurt, lime juice, honey and salt & pepper. Pour mixture over cabbage, toss well and set aside.
- In a skillet over medium high heat, add oil and ground chicken. Cook, crumbling with a spatula or wooden spoon, until chicken starts to brown. Sprinkle seasoning over chicken and continue to cook, mixing well, until chicken is cooked through.
- Add a scoop of chicken to each tortilla, top with slaw and sprinkle with chopped cilantro. Top with your favorite salsa or pico de gallo, and a squeeze of fresh lime juice if desired.
