Burrito Bowls with Cilantro-Lime Rice and Chipotle Crema

 

Make a burrito bowl that rivals your favorite restaurant with Isernio’s Al Pastor Diced Pork! Serve it on a bed of simple cilantro lime rice and top it with a cool and creamy chipotle dressing. Instructions

  1. Rinse the rice in a fine mesh colander under running water until the water runs clear. Cook according to package directions with the following additions: add 1 tsp. salt and 1 bay leaf to the water while cooking.
  2. Heat 1 tsp. olive oil in a pan over medium-high heat. When the oil is hot and shimmering, add the Isernio's Al Pastor Diced Pork and saute until cooked through.
  3. Mix the creamy chipotle dressing. Combine the sour cream, chipotle chiles in adobo, 1/4 tsp. salt, 1 tsp. lime juice, and chili powder in a bowl. Set aside.
  4. When the rice is done cooking, remove the bay leaf and fluff it with a fork. Add 1 tsp. olive oil, 2 Tb. lime juice, and 2 Tb. chopped cilantro. Mix well.
  5. Assemble your burrito bowls. Add the cilantro lime rice, Isernio's Al Pastor Diced Pork, and desired toppings. Drizzle with the chipotle sour cream dressing.
  6. Enjoy!
