Chicken & Apple Sausages with Roasted Potatoes

Ingredients
- 1-1/2 lbs. Isernio’s Chicken & Apple Sausages
- 1 1/2 lbs. medium red potatoes, quartered
- 1 large red onion, cut into small wedges
- 2 Tbsp. fresh rosemary, finely chopped (or 1 tbsp. dried)
- 4 Tbsp. olive oil
- 2 cloves garlic, peeled and crushed
- 4 green onions, peeled & thinly sliced
- Salt & fresh ground pepper to taste
Instructions
- Preheat oven to 350º.
- Place all the ingredients, except green onions, into a baking dish and mix with hands until coated with oil. Bake for 30 minutes, until potatoes are golden and easily pierced with a fork.
- Remove from oven and transfer to an attractive platter. Garnish with sliced green onions. Accompany with fresh sliced oranges, pineapple or papaya.
