Ingredients
- 1lb Isernio’s ground chicken
- 1/3 cup finely chopped red onion
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley (or dill)
- 1 clove garlic, minced
- 1 tsp cumin
- 1/2 tsp dried oregano
- Zest of 1 lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for cooking)

- For the Yogurt Sauce:
- 3/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp chopped fresh dill or mint
- Salt and pepper, to taste

- For Serving:
- Pita bread or pita pockets
- Sliced cucumber, Cherry tomatoes, halved, Lettuce or spinach, crumbled feta
Instructions
- Make the Yogurt Sauce: In a small bowl, whisk together Greek yogurt, lemon juice, garlic, and herbs (if using). Season with salt and pepper. Chill until ready to use.
- Prepare the Chicken Burgers: In a large bowl, combine ground chicken, red onion, feta, parsley, garlic, oregano, lemon zest, salt, and pepper. Mix gently until just combined. Form mixture into 4 small patties (about 1/2 inch thick).
- Cook the Burgers: Heat olive oil in a large skillet or grill pan over medium heat. Cook patties for 4-5 minutes per side, or until golden brown and cooked through (internal temp of 165°F).
- Assemble the Pitas: Warm the pitas slightly, then fill with lettuce/spinach, cucumber, tomatoes, and a chicken burger. Drizzle generously with yogurt sauce and sprinkle with extra feta if desired.
- Serve and Enjoy!
