Instructions

  1. Make the Yogurt Sauce: In a small bowl, whisk together Greek yogurt, lemon juice, garlic, and herbs (if using). Season with salt and pepper. Chill until ready to use.
  2. Prepare the Chicken Burgers: In a large bowl, combine ground chicken, red onion, feta, parsley, garlic, oregano, lemon zest, salt, and pepper. Mix gently until just combined. Form mixture into 4 small patties (about 1/2 inch thick).
  3. Cook the Burgers: Heat olive oil in a large skillet or grill pan over medium heat. Cook patties for 4-5 minutes per side, or until golden brown and cooked through (internal temp of 165°F).
  4. Assemble the Pitas: Warm the pitas slightly, then fill with lettuce/spinach, cucumber, tomatoes, and a chicken burger. Drizzle generously with yogurt sauce and sprinkle with extra feta if desired.
  5. Serve and Enjoy!
