  1. Cook the bacon. Place the bacon in a medium skillet over medium heat. Cook, flipping occasionally, until crisp. Remove bacon from the skillet and place on a paper towel-lined plate to drain. When the bacon is cooled, crumble it with your fingers or chop it with a knife.
  2. Make the taco filling. Season the ground chicken with taco seasoning and add finely chopped onion. Combine until well mixed and roll it into eight balls.
  3. It’s time to make a smash taco! Add meat mixture to your tortillas and spread out to the edges. Make sure it’s a thin layer.
  4. Heat your griddle or cast iron skillet over medium-high heat and drizzle with a light layer of olive oil when hot.
  5. Working in batches, put the tortillas and meat, meat side down in the pan. Smash the tortilla and meat as thinly as possible with a round burger press, a large spatula, or a small saucepan. Cook until the bottoms brown, approximately 3-4 minutes.
  6. Flip the tortilla and meat so the tortilla is face down in the pan. Then add your cheese. Cover with a lid to melt the cheese for 2 minutes.
