Chicken Sweet Potato Chili

Chili is one of our all-time favorite comfort foods. Sweet potato may seem like an unusual ingredient in a savory chili, but it adds a hearty texture and rounds out the spicy flavors from the seasonings. Using our Ground Chicken lightens things up, for a delicious, healthy, and easy-to-cook meal. Be sure to top this chili with all your favorite fixings – shredded cheese, sour cream, avocado, green onions, and tortilla chips are our go-to’s!

Instructions

  1. In a large soup pot, heat oil over medium-high heat and saute the onion for about 5 minutes, until soft.
  2. Add the garlic and Ground Chicken to the pot and cook, crumbling the meat while cooking, for about 5 minutes until the meat starts to lose its pinkness in the middle.
  3. Add the chili powder, cumin, paprika, and cayenne pepper. Stir well to combine.
  4. Add the tomatoes (with juice), chicken broth, kidney beans, and sweet potatoes.
  5. Increase heat and bring the pot to a boil. Once it is bubbling, stir, and then reduce heat to a simmer. Cover the pot with a lid, slightly ajar, and let simmer for about 20-25 minutes until potatoes are soft. Stir occasionally if needed.
  6. Season with a little salt and pepper, if needed. Serve with your favorite toppings. This chili also freezes well and makes great leftovers.
