Ingredients
- 1 lb Isernios Ground Chicken
- 1 Tbsp olive oil
- 1 packet taco seasoning
- Veggie Topping Options:
- Cabbage slaw
- Sliced cabbage
- Sliced radishes
- Diced tomatoes
- Diced mango or pineapple
- Sliced avocado
- Diced onions (these can also be roasted beforehand)
- Bell peppers (these can also be roasted beforehand)
- Beans (black, pinto or refried)
- Add for flavor:
- Salsa
- Guacamole
- Greek yogurt (or sour cream)
- Grated cheese
- Garnishes:
- Cilantro
- Sliced or diced Jalapeno pepper
- Squeeze of fresh lime
- Pepitas or pumpkin seeds
Instructions
- Cook chicken In a pan over medium heat, heat olive oil. Add chicken and brown, stirring every few minutes Once chicken is cooked, add 1 package of taco seasoning & ¼ cup of warm water. Cook over medium heat, stirring occasionally until well combined & seasoned.
- Assemble taco salad: Start with a base of mixed greens. Add toppings of your choice (see above) Top with taco-seasoned Isernio’s ground chicken
