Ingredients
- Tacos:
- 1 pound Isernio’s Ground Chicken
- 1 tablespoon chili powder
- 1 ½ teaspoons ground cumin
- ½ teaspoon red pepper flakes
- ½ teaspoon dried oregano
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper

- Pineapple Salsa:
- 1 cup pineapple, diced small
- ½ cup tomatoes, diced small
- ¼ cup red onion, diced small
- 1 teaspoon jalapeño, minced
- ½ lime, juiced and zested
- ½ cup cilantro, chopped
- .
- Cilantro Lime Sauce:
- 1 cup sour cream
- ½ cup fresh cilantro, roughly chopped
- ½ lime, juiced and zested
- 1 ½ teaspoons honey
- Salt and pepper to taste

- To serve:
- 8 small flour tortillas, shredded cabbage
Instructions
- Make your pineapple salsa. Combine the pineapple, tomato, red onion, jalapeño, lime zest, lime juice, and cilantro in a medium bowl. Cover and set aside until ready to serve.
- Make your cilantro lime sauce. Place all of the ingredients in the food processor and blend until smooth.
- Make the tacos. Heat a skillet or wok over medium-high heat. Add Isernio’s ground chicken and seasonings and cook over medium heat, breaking up the meat with a wooden spoon into small pieces until the chicken has cooked through, about 5-7 minutes. Add 2 tablespoons of water or stock and let simmer until reduced.
- To serve. Warm 8 small flour tortillas and place them on a platter. Fill each tortilla with chicken taco mixtures, a sprinkle of cabbage, and 1/4 cup pineapple salsa. Top with a drizzle of cilantro-lime sauce, and dig in!
