  1. Heat olive oil in a large dutch oven or soup pot over medium heat.
  2. Add the meat, season with salt & pepper and sauté, breaking up with a wooden spoon until beginning to brown, about 5 minutes.
  3. Add celery, carrots, onion, garlic and seasonings. Sauté for 5-10 minutes.
  4. Add the stock, butternut squash, tomatoes, and beans. Bring to a simmer and turn the heat down to low. Cover and cook over low heat for 15-20 minutes, or until the squash is nearly tender. Add your chopped kale and stir until the kale just begins to wilt. Taste and season with more salt, if needed.
  5. Time to enjoy! In shallow bowls, serve this Fall harvest soup topped with your favorite garnish.
