Greek Chicken Meatballs

Everybody loves a great make-ahead meal, and these Greek chicken meatballs will not disappoint. These chicken meatballs come together quickly and will last in the fridge for up to a week. Add the meatballs to salads, sandwiches, or bowls throughout the week.

Instructions

  1. Make the feta yogurt sauce: Combine the yogurt, feta, olive oil, lemon juice, and mint in a food processor or a blender. Blend until smooth and well combined. Add salt and pepper to taste. Set aside.
  2. Preheat the oven to 400F. Line a baking sheet with parchment paper.
  3. In a large bowl, add the ground chicken, egg, breadcrumbs, diced red onion, garlic, parsley, mint, oregano, salt, and pepper; use clean hands to form into golf ball-sized meatballs.
  4. Place on a baking sheet and bake for 15-20 minutes until the meatballs are browned and cooked through.
  5. Serve over greens or your favorite grain. Add fresh veggies, a drizzle of the Feta-yogurt sauce, and slices of warm pita bread.
