Green Chile Chicken Burgers with Cheddar and Grilled Onions

Roasting your own green chiles for this recipe takes a little bit of extra time, but adds a fresh and smoky flavor to these burgers. Or, to save time, you can use whole fire roasted green chiles from a can too.

Grilled onion rounds add a special touch, along with melted sharp cheddar cheese (although Monterey Jack cheese would be just as tasty!).

We like to add a binding ingredient like bread crumbs (or a gluten free flour) when cooking chicken burgers on the grill, to help hold everything together, although you can usually skip this ingredient if cooking burgers on the stove in a skillet.

Another tip: to keep the meat mixture from sticking to your hands while forming patties, rub a little olive oil on your hands first.

Instructions

  1. To roast chiles: Heat your oven’s broiler to high, and place the chiles on a baking sheet and roast until blackened on both sides, turning once. This will take about 10-12 minutes. Watch carefully so they don’t burn. Once they are blackened, place the chiles in a paper bag or plastic gallon size bag. Close the bag so chiles can steam, for about 20 minutes. Remove from bag and rub the chiles to remove the skins. Remove the tops and seeds, and slice each chile in half lengthwise.
  2. Rub each side of the 4 onion rounds with olive oil and set aside.
  3. Prepare the burger patties: Mix together the Ground Chicken, cilantro, breadcrumbs, garlic, salt, pepper. Rub a little olive oil on your hands so the mixture doesn’t stick, and form into 4 patties.
  4. Pre-heat grill to medium low. Using a paper towel and tongs, coat the grates on the grill with olive oil. Place burgers on one side of oiled grill, and onion slices on the other side. Close lid and grill burgers and onions 5 minutes per side, or until internal temperature of the burgers reaches 165 degrees F as measured by a meat thermometer.
  5. When burgers are done cooking, top each patty with 2 long slices of roasted green chile and a slice of cheese. Close grill lid and let cheese melt.
  6. Top each bun with a cooked patty and a round of grilled onions and serve. Add your favorite condiments if desired.
