Ground Chicken Sloppy Joes

Sloppy Joes are a classic comfort food, and always a hit with the kids. We love making this healthier version using our lean Ground Chicken and an easy homemade sauce. You won’t miss the ground beef at all.

This recipe can be made on the stove, in a slow cooker or in an Instant Pot. We’ve included instructions for all three methods below. (Also, the longer it simmers, the better it tastes, so feel free to make this well ahead of time before serving). We like to serve it on kaiser rolls or whole wheat buns, with a side of sweet potato fries.

Instructions

  1. Stove Top: Heat a large pot or dutch oven over medium heat and add the vegetable oil. Add the onion and cook, stirring occasionally until translucent, about 5 minutes.
  2. Add the bell peppers and garlic. Stir for 1 minute. Add the ground chicken and cook, breaking it up with a wooden spoon into crumbles. Cook for another 3 minutes, stirring occasionally, until the chicken loses its pinkness.
  3. Add the carrots, mustard, Worcestershire, liquid smoke, chili powder and paprika to the mixture. Stir for about 30 seconds and then add in the tomato sauce, brown sugar, vinegar and salt & pepper.
  4. Cook for about 5 more minutes, allowing ingredients to combine well. Can be served immediately, or for better flavor, turn down the heat and let the mixture simmer on low for up to 1 hour. Serve on buns.
  5. Slow Cooker Method: Cook the onions, peppers, garlic and ground chicken on the stovetop per steps 1-2 above. Add the meat mixture and the remaining ingredients to a crockpot, stirring to combine. Place the lid on and cook for 4-6 hours on low, or 2-3 hours on high. Serve on buns.
  6. Instant Pot Method: Turn the Instant Pot onto saute and add the onion and oil, following steps 1-3 as stated above. Once the mixture is all combined, place the lid on the Instant Pot and set to manual high pressure for 15 minutes. Allow to naturally release for 5 minutes, then release the remaining pressure and remove the lid. Serve on buns.
