  1. Make the vinaigrette. Combine the shallot, dijon mustard, honey, lemon juice, oil, salt, and pepper in a medium bowl. Stir to combine.
  2. Heat one tablespoon of olive oil in a frying pan over medium-high heat. Add Isernio's Diced Chicken Breast to the pan and season to your liking (we recommend salt, pepper, and cumin). Let the chicken cook for about 10 minutes, stirring occasionally and breaking up if needed. Set aside to cool.
  3. Make the salad. Place the lettuce on a large platter. Top with the eggs, cooked chicken, tomatoes, blue cheese, bacon, and avocado. Drizzle with vinaigrette and serve family-style.
