Ingredients
- Salad:
- 2 lb Isernio’s Ground Chicken
- 1 cup salsa
- 1 small onion (diced)
- 1 package taco seasoning
- 2 tablespoons olive oil
- 2 cups black beans (drained)
- 2 cups corn
- 2 bell peppers, diced
- 2 cups cherry tomatoes
- 1 cup diced red onion
- 1 cup shredded cheddar cheese
- 4–6 cups chopped romaine or mixed greens

- To serve:
- 2 diced avocados
- 2 cups crushed tortilla chips
- Fresh cilantro
- Lime wedges
Instructions
- Cook Chicken Heat oil in a skillet. Sauté onion until soft, then add ground chicken. Cook until browned, stir in taco seasoning + splash of water if needed. Stir in 1 cup of salsa. Let cool.
- Make Dressing Whisk yogurt, salsa, oil, lime, cilantro, cumin, salt + pepper.
- Assemble jars in the following order: Dressing, beans, corn, peppers, tomatoes, red onion, ground chicken, cheese, greens on top.
- Serve + Store Refrigerate up to 4–5 days. Add avocado, tortilla chips, cilantro + lime right before eating. Pour into a bowl, toss, enjoy.
