  1. Heat olive oil in a large Dutch oven or soup pot over medium heat.
  2. Add the meat and onion, season with salt & pepper, and sauté, breaking up with a wooden spoon until beginning to brown, about 5 minutes.
  3. Add garlic, Italian seasoning, fennel & chili flakes and cook until fragrant, about 1 more minute.
  4. Add tomato paste, canned tomatoes, tomato sauce, and chicken broth, and bring to a slow boil for 10 minutes.
  5. Meanwhile, break up the lasagna noodles into 2-3 inch pieces and add to the soup pot. Reduce heat slightly and cook for about 10 minutes or until noodles are tender.
  6. In a small bowl, stir mozzarella, Parmesan, and ricotta cheeses.
  7. Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture. Garnish with fresh basil, a sprinkle of chili flakes and Parmesan.
