- Mediterranean Chicken:
- 1 pound Isernio’s Ground Chicken
- 1 small onion, diced
- ¼ cup Greek seasoning

- Lemon Couscous:
- 1 cup couscous
- 1 cup chicken broth
- 1 lemon, zest & juiced
- 1 cup peas
- 1/4 cup parsley, chopped
- 2 tablespoons mint, chopped
- .
- Greek Salad:
- 1/2 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 cup olives
- 1/4 cup feta cheese
- .
- Cucumber Yogurt:
- 1/2 cucumber, grated
- 3/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1 teaspoon dill
Instructions
- Make the chicken. Brown ground chicken and chopped onion in a large skillet over medium-high heat.
- Make the couscous. Bring 1 cup of water to a boil. Pour in the couscous, stir, remove from heat and immediately cover with a lid. Let rest 4-5 minutes off heat. Add lemon juice, zest, peas and herbs. Toss to combine.
- Make the Greek salad. Combine salad ingredients and set aside.
- Make the cucumber yogurt. Combine ingredients and mix well. Set aside.
- Assemble your meal prep. Divide the chicken into four portions, the Greek salad into four portions, and the cucumber yogurt into four portions. Enjoy throughout the week.
