Minestrone is a zippy, satisfying soup that is a family favorite. Simple, healthy, and fresh ingredients come together in a flash with great flavors thanks to Isernio’s Italian Chicken Sausage. 

This soup comes off like you spent all day cooking, but it takes only 20 minutes or so for it to all come together. Serve with warm bread, and be prepared to hear some “wow’s”!

Ingredients

  • 1 pound Isernio’s Mild Italian Chicken Sausage (mild or hot)
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 3 celery stalks, diced
  • 3 carrots, diced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon chili flakes (optional)
  • 1 sprig of fresh thyme, minced
  • 1 sprig fresh oregano, minced
  • 1 sprig fresh rosemary
  • 8 cups chicken stock
  • 1 28-ounce can of whole tomatoes
  • 1 14-ounce can of cannellini or kidney beans, drained
  • 2 zucchini, diced
  • ¼ cup fresh basil, minced
  • 3 cups small pasta of choice (macaroni, mini shells, small penne)
