One-Bowl Greek Pasta Salad with Grilled Spinach & Feta Chicken Sausage

Make a fabulous pasta salad with Isernio’s Spinach & Feta Chicken Sausages in one bowl! This dish shines with bright flavors, and the fact that you can make it in one large bowl makes it the perfect easy addition to a BBQ or picnic.

While pasta salads are great, many of them lack protein. We love the addition of grilled chicken sausages to provide a healthy side dish. This dish will leave you feeling fresh with a tangy vinegar dressing. Serve it warm, cold, room-temp, day-old, or brand new—you can’t go wrong!

Instructions

  1. Prepare the sausages. Bring a skillet of water large enough to immerse the sausages to a boil. Add the sausages, turn the heat off, and cover. Let the sausages steep for 7 minutes. Drain the water and brown the sausages in olive oil for 5 minutes per side, or until golden, in a pan over low heat. Set the sausages aside and slice when cool enough to handle.
  2. In a large bowl, combine the dressing ingredients: garlic, olive oil, vinegar, and seasonings. Add all of the pasta salad ingredients except for the grilled sausages and feta to the bowl. Gently toss to combine. Crumble the feta and sliced sausages over the salad and then, again, very gently toss.
