Sausage and Veggie Skewers with Garlic Mojo Sauce

On a hot day, we take it outside with a grillable feast that the whole family will love. Our friend, private chef Corie Cameron of Good Life Everyday, shared this recipe she uses to turn Isernio’s Italian Chicken Roll into a healthy, delicious meal that keeps her house cool and her kids happy.

  1. Roll the sausage into 1-inch balls and set on a plate
  2. Chop the vegetables into 1-inch pieces and mix in a bowl.
  3. Mix the Mojo sauce ingredients together in a blender or small food processor until well combined.
  4. Pour half of the sauce onto the vegetables and let them marinate for half an hour (or overnight in the fridge)
  5. Skewer the vegetables and meatballs onto sticks, alternating between different vegetables and sausage throughout
  6. Place the skewers on an oiled grill over medium high heat, turning them to cook on all sides
  7. Grill for about ten minutes until the sausage is fully cooked and serve with the reserved Mojo sauce
