  1. Cook the sweet potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they begin to soften and lightly brown. Remove the sweet potatoes from the skillet and set aside.
  2. Cook the onion and garlic: In the same skillet, add the chopped onion and sauté for about 3 minutes until it softens. Stir in the minced garlic and cook for another minute until fragrant.
  3. Brown the ground chicken: Add the ground chicken to the skillet. Cook for 6-8 minutes, breaking up the meat as it browns and cooks through.
  4. Add the seasonings: Stir in the smoked paprika, cumin, chili powder, ground coriander, cayenne pepper (if using), salt, and pepper. Let the spices coat the chicken and cook for about 2 minutes to deepen the flavors.
  5. Combine everything: Add the cooked sweet potatoes back into the skillet along with the black beans. Pour in the chicken broth or water to deglaze the skillet, stirring to combine everything. Let the mixture simmer for 3-4 minutes until everything is heated through and flavors meld together.
  6. Assemble the tacos: Spoon the smoky chicken, sweet potato, and black bean mixture into warmed tortillas.
  7. Top and serve: Garnish with your favorite toppings like fresh cilantro, lime juice, avocado slices, and a dollop of sour cream. Serve immediately and enjoy!
