Our lean Ground Chicken is cooked with fresh Asian-inspired flavors and peppers for a little bit of heat. These mixture can be served in lettuce or cabbage leaves, or even endive leaves, for a healthy handheld wrap.

Ingredients
- 1 Tb olive oil
- 1 lb Isernio's Ground Chicken
- 1/3 cup chicken stock
- 1/2 cup cilantro, roughly chopped
- 1/2 cup fresh mint leaves, roughly chopped
- 1 Serrano or Jalapeno pepper, seeds & ribbing removed, sliced thinly
- 1 shallot, sliced
- 2 stalks lemongrass, bottom 1/2 of stalk thinly sliced
- 1 1/2 Tb fish sauce
- 1 1/2 limes, juiced
- Lettuce, cabbage or endive leaves
- 1/2 cucumber, sliced
- Handful of cilantro, leaves and stems
- Steamed rice
Instructions
- Heat oil over medium-high heat in a skillet and add Isernios ground chicken. Season with salt and cook until brown and crispy, about 8-10 minutes. Turn the heat down to medium. Add the stock and lemongrass and allow to simmer for a few minutes until the stock reduces a bit and the lemongrass starts to soften. Set aside to cool slightly.
- In a medium bowl, mix the cooked chicken, cilantro, mint, pepper, and shallot. Add the fish sauce and lime juice and taste for seasoning.
- Serve with lettuce leaves, sliced cucumber, and cilantro.
