Spinach-Feta Sausage Bites with Whipped Feta

Instructions

  1. Make the feta yogurt sauce. In a food processor, place the feta, yogurt, olive oil, lemon juice, and garlic. Pulse until creamy. Transfer to a serving dish and top with a pinch of red pepper, and chopped parsley.
  2. Prepare the sausages. Bring a skillet of water large enough to immerse the sausages to a boil. Add the sausages, turn the heat off and cover. Let sausages steep for 7 minutes. Drain the water and brown sausages in olive oil for 5 minutes per side, or until golden, in a pan over low heat. Set sausages aside and slice when cool enough to handle.
  3. Assemble the appetizer. Thread a wooden skewer with a slice of sausage, a piece of roasted bell peppers, a piece of artichoke heart, and top with an olive.
  4. Serve on a platter with whipped feta dip and pita chips. Time to dig in and enjoy!
