Sausage and Veggie Skewers with Garlic Mojo Sauce

On a hot day, we take it outside with a grillable feast that the whole family will love. Our friend, private chef Corie Cameron of Good Life Everyday, shared this recipe she uses to turn Isernio’s Italian Chicken Roll into a healthy, delicious meal that keeps her house cool and her kids happy.

  • 1. Roll the sausage into 1-inch balls and set on a plate
  • 2. Chop the vegetables into 1-inch pieces and mix in a bowl.
  • 3. Mix the Mojo sauce ingredients together in a blender or small food processor until well combined.
  • 4. Pour half of the sauce onto the vegetables and let them marinate for half an hour (or overnight in the fridge)
  • 5. Skewer the vegetables and meatballs onto sticks, alternating between different vegetables and sausage throughout
  • 6. Place the skewers on an oiled grill over medium high heat, turning them to cook on all sides
  • 7. Grill for about ten minutes until the sausage is fully cooked and serve with the reserved Mojo sauce
