Instructions

  1. Cook the chicken. Heat a large skillet over medium-high heat. Add the Isernio’s Chipotle Lime Diced Chicken Thighs and cook, stirring occasionally, until browned and cooked through to an internal temperature of 165°F. Transfer to a plate and keep warm.
  2. Cook the vegetables. Add olive oil to the same skillet if needed. Add the bell pepper and red onion and sauté for 5–7 minutes, until tender and lightly charred.
  3. Make the cilantro lime rice. Stir the lime juice and chopped cilantro into the warm cooked rice.
  4. Warm the beans. Heat the black beans in a small saucepan or microwave until warmed through.
  5. Build the bowls. Divide the cilantro lime rice among four bowls. Top with Chipotle Lime Chicken, black beans, peppers and onions, romaine, pico de gallo, cheese and guacamole.
  6. Finish and serve. Garnish with cilantro and a squeeze of fresh lime. Add tortilla chips, sour cream or jalapeños as desired.
