Ground Chicken Parmigiana Sliders

All the delicious flavors of your favorite Chicken Parmigiana – chicken, cheese, marinara and fresh basil – combined in one delicious handheld sandwich. Keep it easy with your favorite jarred marinara sauce and store-bought slider buns. The kids will love helping out with this one in the kitchen too!

Instructions

  1. Heat a medium skillet over medium heat. Add olive oil to pan and swirl to coat. Add onion, oregano and garlic. Cook for about 3 minutes until soft. Place this mixture into a large bowl and cool slightly.
  2. To the onion mixture add the ground chicken, parmesan cheese, 1/4 cup of the marinara, salt, black pepper, and crushed red pepper. Mix well. Place bowl into the refrigerator to chill for about 15 minutes.
  3. Preheat your broiler to high. After about 15 minutes of chilling, form chicken mixture into 8 slider-sized patties (about 1/2 inch thick). Heat a medium nonstick skillet over medium heat and coat with cooking spray. Add patties to skillet and cook, turning once, until cooked through to an internal temperature of 165 degrees F (about 10-12 minutes).
  4. Arrange the bottom halves of the slider buns on a baking sheet. Place 1 cooked patty on each bun. Top each patty with 1Tb of the remaining marinara and 1 1/2 Tb shredded mozzarella cheese. Broil for about 1 to 1 1/2 minutes, watching closely, until the cheese is melted.
  5. Remove from oven and top each slider with a fresh basil leaf and top half of bun. Serve immediately.
