Instructions

  1. Make the Meatballs: Preheat the oven to 400°F. Mix all meatball ingredients in a bowl. Form into 16 small meatballs and place on a parchment-lined baking sheet. Bake for 15–18 minutes or until cooked through and golden.
  2. Make the Sauce: In a large skillet, heat olive oil over medium. Add garlic and red pepper flakes and sauté 1–2 minutes. Stir in sun-dried tomatoes and cook for 2 more minutes. Add chicken broth and bring to a simmer. Stir in cream and parmesan. Simmer until slightly thickened, 4–5 minutes. Add spinach.
  3. Combine: Add cooked meatballs to the skillet and spoon sauce over top. Let them simmer together for a few minutes so the flavors meld.
  4. Serve It Up: Spoon into meal prep containers with your base of choice — pasta, rice, mashed potatoes, or cauliflower rice. Garnish with extra parm or chopped basil if you’re feelin’ fancy.
