Ingredients
- For the Meatballs:
- 1 lb Isernio’s Ground Chicken
- ¼ cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp chopped fresh parsley
- 2 tbsp grated parmesan

- For the Sauce:
- 1 tbsp olive oil
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ cup chopped sun-dried tomatoes (in oil, drained)
- ¾ cup low-sodium chicken broth
- ¾ cup heavy cream
- ⅓ cup grated parmesan cheese
- Handful of spinach
- Salt & pepper to taste
Instructions
- Make the Meatballs: Preheat the oven to 400°F. Mix all meatball ingredients in a bowl. Form into 16 small meatballs and place on a parchment-lined baking sheet. Bake for 15–18 minutes or until cooked through and golden.
- Make the Sauce: In a large skillet, heat olive oil over medium. Add garlic and red pepper flakes and sauté 1–2 minutes. Stir in sun-dried tomatoes and cook for 2 more minutes. Add chicken broth and bring to a simmer. Stir in cream and parmesan. Simmer until slightly thickened, 4–5 minutes. Add spinach.
- Combine: Add cooked meatballs to the skillet and spoon sauce over top. Let them simmer together for a few minutes so the flavors meld.
