Thai Basil Chicken Stir Fry with Isernio’s All-Natural, Extra Lean Ground Chicken

@MissionFitChick’s Thai Basil Chicken Stir Fry

Ingredients:

      1lb Isernio’s ground chicken

½ chopped onion

2-3 sprigs of thai basil

½ red bell pepper

6 minced garlic cloves

1 c sliced mushrooms

1-2 tbsp fish sauce

1 tbsp soy sauce

1 pinch coconut sugar

1 tsp olive oil 

Directions:

Stir fry ingredients in wok or nonstick skillet until chicken is cooked and veggies are
tender.

FRANK ISERNIO HONORED WITH THE 2013 ANGELO PELLEGRINI AWARD

The Angelo Pellegrini Foundation has announced that Frank Isernio will be the recipient of the 2013 Angelo Pellegrini Award, which is presented annually to an awardee who is distinguished by long and dedicated service to the ideals espoused by author and Italian food and wine evangelist Angelo Pellegrini.   Pellegrini is revered by culinary industry professionals, including Alice Waters, Ruth Reichl and Mario Batali – who wrote the forward to the recent re-publication of Pellegrini’s book The Unprejudiced Palate – as having a lasting and guiding influence on their careers.

The annual award ceremony honoring Frank Isernio will take place on Friday, October 25th at The Canal in Seattle, and will consist of a festive dinner celebrating what Pellegrini called “The Good Life:”  Fine food, wine, community and the culture of the table.  The event’s
seasonal, multi-course menu will be created by Armandino Batali (2007 Pellegrini awardee), owner of Salumi in Seattle, and Roy Breiman, culinary director of the Copperleaf Restaurant in Normandy Park’s boutique hotel Cedarbrook Lodge.

From the words of a Pellegrini family member, “This award exists for, and because of people like Frank, and all they’ve done and continue to do for our community here in Seattle.”

Each year, a committee composed of members of the Pellegrini family and of previous winners of the award chooses a person who has contributed significantly and over the long term to the life and well-being of the people of the Pacific Northwest in one or more of the following areas:

  • Agriculture—encouraging local food production, with
    an emphasis on freshness, seasonality and organic practices.
  • Viticulture—promoting high standards for the
    growth and vinification of fine grape varieties as well as encouraging home
    grape growers and winemakers.
  • Culinary—campaigning for the service of appetizing
    and nourishing food both on restaurant and family tables, through education as
    well as example.
  • Literary—furthering all the above goals through
    writing, publishing, film, and new media alike.

 ABOUT ANGELO PELLEGRINI AND THE FOUNDATION

Angelo Pellegrini (1904 – 1991) was an author of books about the pleasures of growing and making your own food and wine, and about the Italian immigrant experience. He was also a professor of English Literature at the University of Washington. Pellegrini’s family emigrated from Tuscany to McCleary, Washington in 1913 where his father worked for the railroad. 

The Angelo Pellegrini Foundation is a non-profit organization created to propagate the pioneering ideas of Angelo Pellegrini, who preached the virtues of good food, good wine, and good company.

Pasta Primavera with Isernio’s Hot Italian Chicken Sausage

Pasta Primavera is a dish which consists of pasta and sautéed vegetables. Pasta Primavera may contain almost any kind of crisp, fresh vegetables and often times include a meat. Although its name translated to English means “Spring Pasta,” this savory dish is enjoyed by many throughout the year. 

Here is a recipe for Pasta Primavera from our friend and fan, Charlotte R. of Bremerton, WA:

Ingredients:

1 lb Isernio’s hot Italian chicken sausage (also tastes great with these substitutes: Isernio’s mild Italian chicken sausage or chicken basil and sun dried tomato sausage)
6 oz rotini pasta, cooked and drained
1 Tbsp. Extra Virgin Olive Oil
4 garlic cloves, minced
1 cup mixed summer squash, large dice
¾ cup sweet onion, large dice
½ cup sun dried, julienne cut, tomatoes in olive oil, drained
¼ cup sliced Kalamata Olives
2 tsp. red pepper flakes
½ tsp. kosher salt
¼ cup shredded parmesan cheese
¼ cup shredded mozzarella cheese
¼ cup chiffonade cut fresh basil

Let’s Cook!

Bring a skillet of water large enough to immerse the sausages, to a boil.  Lower uncooked sausages into boiling water, place the lid on and immediately turn heat off.  Let sausages sit in the hot water for approximately 7 minutes. Then, brown the links in a pan with 2 teaspoons of olive oil, over medium heat. When the links have been browned and are fully cooked, remove from heat and set aside.

Heat cast iron skillet to Medium with olive oil.  Once oil is hot, add minced garlic.  Cook until light golden in color.  Turn up heat 1 notch, add onion, sun dried tomatoes, summer squash, and olives.  Toss in hot pan until starting to soften and cook.  Add in cooked sausage and pasta, toss to heat through and mix. 

Place basil and cheeses on top and serve immediately

This afternoon in the test kitchen we tested a new recipe – Caprese & Italian Chicken Sausage Rosemary Skewers. We took the Caprese Rosemary Skewers recipe from Karista’s Kitchen (http://karistaskitchen.com/2013/06/25/caprese-rosemary-skewers/) and added our own spin to it by using Italian Chicken sausage! This is a fun and simple to make antipasto that will make a fantastic addition to this year’s Fourth of July!

Ingredients

Cherry Tomatoes, Small Mozzarella Balls, Rosemary Sprigs (the older the sturdier), Basil Leaves (torn into pieces), Olive Oil, Balsamic Vinegar, Sea Salt and Ground Pepper

Let’s Cook!

Bring a skillet of water large enough to immerse the sausages, to a boil. Lower uncooked sausages into boiling water, place the lid on and immediately turn heat off. Let sausages sit in the hot water for approximately 7 minutes. Then, brown the links in a pan with 2 teaspoons of olive oil, over medium heat. When the links have been browned and are fully cooked, remove from heat and place the links over ice (approximately 15 minutes until cool)

While the links cool, remove the needles from the rosemary stalks, leaving the needles at the top end for decoration.

In a medium sized mixing bowl, mix one tablespoon of olive oil with two teaspoons of balsamic vinegar. Then, gently toss the cherry tomatoes, basil, mozzarella balls and Italian Chicken sausage in this mixture.

Using the rosemary stalks as skewers, add the cherry tomatoes, basil, mozzarella balls and Italian Chicken sausage, alternating these ingredients to make a beautiful skewer. When finished, sprinkle the skewers with a little sea salt and pepper.
