Fourth of July – Isernio’s Top 5 Recipes

    2. Roasted Sausage & Peppers

    This simple recipe takes only 10 minutes to prepare, and then everything is roasted together in the oven – a perfect weeknight meal for busy families, or an easy dish for entertaining.  The vibrant colors and inviting aromas of this dish are sure to impress!

      3. Margherita Isernio’s Sausage Meatballs –

      Use our chicken or pork sausage. These meatballs can be served by themselves as appetizers, or simmer in your favorite tomato sauce for at least a half hour to infuse the sauce with flavor from the meatballs. Serve meatballs and sauce al-dente cooked pasta.

      4. Margherita’s Sausage Stuffed Peppers –

      This is a great dish to make ahead and it tastes good reheated the next day.

        5. Grilled Sausage Skewers with Salsa Verde –

        This is an easy, colorful and delicious appetizer for 4, or an entree for 2 – perfect for summer entertaining.  The Italian Salsa Verde is also good with grilled chicken breast and fish.

        All of these dishes pair well with grilled eggplant or zucchini, a mixed salad, and a colorful fruit spread.

        Cooking tip: before grilling (or frying), simmer your links in hot water for 6-8 minutes. This cooks the sausages almost all the way through and helps avoid drying out or burning your links on the grill!

        Cooking tip: Do not use sharp forks & knives to turn and move your sausages. It may cause the juices to drip out, removing flavor.

        Pasta e Fagioli “Pasta Fazool” recipe with Isernio’s Chicken Sausage

        Pasta & Bean Soup with Isernio's Chicken SausageWe are hopeful that spring is just around the corner, but meanwhile a lot of us are still feeling the chill of winter.  Here’s another recipe that’s great for beating the cold weather.

        This classic pasta and bean soup, “Pasta Fazool” as Italian Americans often lovingly call it, is traditionally a meatless dish, but is delicious when made with our sausage.  To keep it low-fat, you can use our chicken sausage rolls, or our pork Italian sausage works great as well.  We find canned Cannellini beans (or Great Northern Beans) work very well and transform this dish into a quick, satisfying one-pot family meal. Make a large portion, because it tastes even better reheated a day or two later!

        Shopping List:

        4

        Isernio’s Italian Sausages or 1 lb. bulk roll (pork or chicken)

        4

        Tbsp. olive oil

        1

        medium onion, chopped

        2

        stalks celery, halved lengthwise and chopped

        1

        large carrot, peeled, quartered lengthwise and chopped

        3

        cloves fresh garlic, finely chopped or pressed

        2

        tsp. fresh oregano, finely chopped or 1 tsp. dried

        1/2

        tsp. red pepper flakes

        1

        28-oz. can Italian style plum tomatoes, with juice, squeezed by hand or broken up in skillet with a wooden spoon

        1

        16-oz. can Cannellini Beans, drained and rinsed in a colander

        2

        cups low salt chicken broth

        1/2

        lb. dried Ditalini or Tubetti or other small tubular pasta

         

        Salt and fresh ground black pepper to taste

        1/4

        cup fresh Italian parsley, chopped

        4-6

        tbsp. grated Pecorino Romano cheese

        Let’s Cook

        In a large 13 quart pot, heat 2 Tbsp. olive oil and cook sausage over medium heat until brown, but not cooked through completely. Remove sausages, cut into 3/4″ slices and set aside.You may also choose to remove the casings, or use Isernio’s bulk sausage, breaking meat up with a wooden spoon and cooking until all pinkness is gone, do not brown. Remove meat from skillet with a slotted spoon and set aside.

        Add remaining 2 Tbsp. olive oil to the skillet, add the onion, celery, carrot, garlic, oregano and red pepper flakes and cook until soft, 10 -12 minutes, stirring occasionally.

        Add tomatoes, breaking them up by hand or with a wooden spoon. Add the sausage and chicken broth and bring to a boil, reduce heat and simmer covered for 30 minutes. Stir in beans and cook at medium heat for 10 more minutes. Salt and pepper to taste.

        While the soup is cooking, bring 5 qts. of water to a boil. Add 2 Tbsp. salt to boiling water, add the pasta and cook about 8-10 minutes, or according to the package instructions. Drain the pasta and add to the soup.

        Stir in the chopped parsley and ladle soup into bowls, top each with a drizzle of good olive oil and grated Pecorino Romano cheese.

        Enjoy every last drop of soup with some good crusty Italian bread.

        Making a juicy, flavorful burger is as simple as forming our chicken sausage into a patty and grilling it up!  Use our chicken sausage rolls (Italian or Hot Italian) in this recipe and you’ll save 80% of the fat vs. ground beef (4.5g of fat in a 4 oz. serving of our Italian Chicken sausage, vs. 22.5 g. of fat in 80% lean ground beef).

        Sausage MeatballsChicken Sausage Meatballs
        Meatballs are the perfect appetizer – serve them in a crockpot, or with toothpicks as finger food.  Simply roll our fresh chicken sausage into 1” balls and bake on a greased cookie sheet in the oven at 375° for about 12 minutes, until cooked thoroughly, or follow Margaret Isernio’s recipe on our website and simmer in your favorite tomato sauce for even more authentic Italian flavor.  Again, you’re going to save a huge amount of fat and calories vs. using ground beef or pork!
